Where does your pork & beef come from?

Currently all of our pork is sourced from Bear Flower Pork Farm which focuses on raising free-range, happy pigs. Our beef is sourced from Gemstone Grass Fed Beef. All suppliers are within a 200km radius from our production facility.

why do you use nitrates? do you have nitrate free line?

There is no heat treatment or pasteurization step applied to our products, making them authentic Italian salumi products, so by Canadian Food Inspection Agency (CFIA) law we have to use nitrates in our product to prevent bad bacteria from growing. We do use the minimum amount required by for our products.

Most commonly, on nitrate free advertised products, they use celery salt, or beet salt in lieu of the “curing salts” as celery salt has natural nitrates in it.
 

what is your shelf life on your 165g boxes, and 300g pair packs?

All of our unopened products have a minimum of 6 months, with most around 1year as long as refrigerated. If opened, we recommend eating within one week to avoid oxidation, or vacuum with a food-saver.

If you’re getting it sliced at a deli, most likely they have deli-bagged it for you- so it’s recommended to check with them how it was prepared and what the life span is. Most commonly, deli counters will suggest 3 days sliced in a deli bag.
 

I ordered on your website. what is your shipping time?

All of our Calgary deliveries are hand-delivered by our team on Wednesdays and Fridays. We require a minimum 1 business day to process the order, so if there is a specific day you require your order by please email hello@vdgsalumi.com.

All of our Alberta shipping will be shipped after 1-2 processing days. Time in shipment is expedited shipping during business days, and is usually 1 day. We do not ship over weekends as we do not want the product to be stuck in transit.

At this time due to Government regulations we cannot ship outside Alberta, however we are working to change this.

I’ve ordered 100g sliced packs from you before. when are they coming back?

Excellent question! We are launching new and improved packages in early Spring 2021! In the meantime, you can shop them on Spud and Cultivatr.
 

are your products gluten free?

Heck yes! We have a dedicated facility to it as well. Simply put, it’s not needed in cured meat or salami.

You’re a certified b-Corp company. what does that mean?

In March 2021, after a lengthy (we’re talking years here!) process, we proudly obtained our B Corp Certification . Not only are we the only cured meat company to obtain this, we are the highest scoring meat (think all branches: deli, sausages, hamburgers etc) company that has this certification. Certified B Corporations meet the highest standards of social and environmental performance, which means things like paying a living wage, donating back to the community, tracking where our pork comes from (and how they’re treated!!!).
